What to expect

Imayo Tsukasa sits a short taxi ride from the port in the heart of Niigata city. Guides lead you through centuries-old fermentation rooms, explaining how Niigata's pristine snowmelt water and locally grown Gohyakumangoku rice create Japan's most refined sake style. The tasting culminates in a flight of their finest junmai daiginjo, sipped slowly in a beautifully preserved Meiji-era storehouse. A boutique shop offers exclusive bottlings to take home.
