Join a Venetian chef at the Rialto Market at dawn, when lagoon fishermen unload their catch and local restaurateurs shop — then retreat to a private bacaro for a hands-on cicchetti and Spritz masterclass using what you've just selected.
What to expect
The market blazes with colour at first light: violet cuttlefish, coral-red shrimp, towers of artichoke-like castraure and bins of briny moleche soft-shell crab. Your guide explains the seasonal rhythms of the lagoon as stallholders call out greetings by name. Back in a centuries-old bacaro tucked behind Campo della Pescaria, a local chef teaches you to construct the canonical cicchetti — baccalà mantecato on grilled polenta, sarde in saor, and the perfect Spritz Veneziano. You eat what you've made, with a glass of Soave Classico. It is the most honest hour Venice offers.
Good to know
The market is liveliest 7–9 AM Tuesday to Saturday; closed Sunday and Monday. From Marghera, the shuttle and Vaporetto Line 1 to Rialto Mercato takes about 45 minutes — aim to be at the market by 7:30 AM. The masterclass wraps by 10:30 AM, leaving the rest of the day free. Book at least 2–3 weeks ahead for private slots.
