What to expect
Set in a centuries-old guild house steps from the Markt, the session opens with an expert introduction to Belgian chocolate heritage — the difference between couverture and compound, the terroir of cacao, the Bruges praline tradition. You then don an apron and work with the chocolatier to temper dark and milk chocolate, fill hand-rolled ganache centres, and dip, mould, and decorate your own pralines. Fresh liège waffles, pulled from a cast-iron iron and drizzled with warm chocolate, close the session alongside a flight of single-origin drinking chocolates.
