Date Line Gastronomy: Private Feast of Two Days, Two Kitchens

A uniquely curated private dining journey staged across the date line — a sunset feast on the 'western' day followed by a dawn breakfast on the 'eastern' day — with local Tongan and Kiribati chefs preparing traditional dishes in a luxury overwater setting.

What to expect

As the ship approaches the 180° meridian, a private water taxi transfers your group to a traditional Tongan open-sided fale perched over the lagoon. The first sitting — 'yesterday's dinner' — features a umu (earth oven) feast of suckling pig, taro, palusami (coconut cream-wrapped taro leaves) and fresh lobster, accompanied by coconut toddy and local commentary from your chef-host. At midnight, you cross the date line together with a champagne toast, and 'tomorrow's breakfast' begins: fresh reef fish ceviche, tropical fruit platters, freshly baked uto (coconut bread) and cold-brew Tongan coffee at sunrise. The juxtaposition of two meals, two days, one magical setting is pure bucket-list theatre.

Tonga is the closest land-based luxury dining option near the date line. Co-ordinate the transfer window carefully with guest services — the experience runs approximately 14:00–07:00 local time. Dietary requirements (including vegetarian/vegan) must be communicated at least 2 weeks in advance.
