What to expect
You trek through ancient oak forest at dawn following the trifolau and his eager Lagotto hounds, learning to read the forest floor for the telltale signs of buried gold. When the dogs signal, you kneel and unearth the truffle yourself. Back at the stone farmhouse, the estate chef shaves your truffles over hand-rolled pasta, eggs from that morning, and aged Pecorino. Local Sagrantino wine flows freely. This is the Umbrian countryside at its most intimate.
