Join a fifth-generation truffle hunter and his trained Lagotto dogs deep in the Lazio hills for a magical morning hunt, followed by a lavish private lunch of hand-made pasta, local wine and freshly shaved black truffle in an ancient farmhouse.
What to expect
The morning begins as the Lagotto dogs dart excitedly through oak woodland, noses to the earth. Your host explains how to spot the telltale signs of black truffle beneath the soil — and hands you a small rake to unearth one yourself. Back at the stone farmhouse, a nonna presides over hand-rolled tagliatelle tossed in truffle butter, paired with local Frascati white wine. The final ritual is a grappa toast around the fire. Deeply, deliciously authentic.
Good to know
The estate is approximately 1 hour from Civitavecchia by private car — arrange a driver for the full day. Wear comfortable walking shoes and bring a layer; woodland mornings are cool year-round. Book directly with the estate at least 2 weeks in advance.
