What to expect
A private 4x4 collects you from the pier and winds through sugarcane fields and mango groves to the estate. The chocolatier walks you through the full bean-to-bar process, letting you taste cacao pulp straight from the pod — sweet and citrusy — before the roasting transforms it. Lunch is a three-course spread of Dominican creole cuisine: slow-braised goat, rice with pigeon peas, and coconut tart, paired with a guided flight of small-batch aged rums. You return to the ship with your own chocolate bar and a bottle of estate rum.
