What to expect

The morning begins at Dubrovnik's open-air Gundulić Square market, where your chef selects the day's ingredients — heirloom tomatoes, fresh fish, aged pršut, and local cheeses — introducing you to the farmers and fishmongers along the way. Back in a charming Old City kitchen, you prepare a three-course Dalmatian menu: perhaps black squid-ink risotto, slow-braised lamb, and rožata custard pudding. The class is convivial and unhurried, with local wine poured throughout. You sit down to eat what you've cooked, recipe cards in hand — a flavour of Croatia to take home.
