A private car collects you from the quayside and delivers you to a restored turf-roofed farmhouse lit entirely by beeswax candles and fire. The chef introduces each of the eight courses personally, explaining the forager, the fjord, or the small-boat fisherman behind every ingredient. Dishes range from hand-dived scallops with cloudberry emulsion to slow-braised reindeer with juniper ash. The aquavit pairing has been curated to mirror each flavour profile, and the sommelier presents each selection with the story of its Nordic producer.
