Buenos Aires Asado: What to Expect

An asado is essentially a long, meat-centric barbecue where Argentines gather around a fire, drink wine or beer, and eat for hours. In Buenos Aires you’ll find everything from casual backyard versions to structured tourist experiences that last 3–4 hours. Expect generous portions of grilled beef (ribeye, short ribs, flank), chorizo, blood sausage, provoleta cheese, and simple salads. The pace is slow; it’s more about the ritual and conversation than fine dining. Most experiences include some explanation of cuts and grilling technique, plenty of Malbec, and end with dessert and coffee. It’s social, filling, and very carnivorous.

The best time is spring (Oct–Dec) or fall (Mar–May) when the weather is pleasant for outdoor grilling. Summer can be brutally hot and winter feels less festive. Expect to pay around $80–150 USD per person for a proper experience that includes wine, sides, and transport if it’s outside the city. Cheaper city-center tasting menus start around $60 but feel more like a dinner than a true asado.

Tip: order the tira de asado (short ribs) and entraña (skirt steak) – they’re what locals fight over. Skip the overly touristy “gaucho ranch day tours” unless you actually want the full countryside show; a smaller city or outskirts asado usually feels more authentic. Pace yourself – the meat keeps coming.
