You'll hit two or three markets, usually starting at the iconic Mercado de San Miguel before heading to smaller neighborhood spots. Expect to stand, graze, and sample everything from jamón ibérico and fresh oysters to patatas bravas, cheese, and vermouth. It's not a seated meal but a progressive tasting with a guide explaining Spanish cured meats, cheese etiquette, and market culture. Groups are usually small, around 8-12 people. The pace is casual but you cover decent ground.

Best time is spring or fall when temperatures are comfortable for walking between markets. Avoid July and August unless you love heat; winter is fine if you don't mind shorter days. Expect to pay around €80–€120 per person for a decent half-day tour that includes all tastings. It's not cheap, but it beats wandering markets alone and missing the good stuff.
