Expect crowds, loud calls from vendors, the smell of grilling meat and spices everywhere, and a mix of tourists and locals. You'll usually try six to eight small dishes ranging from harira soup and msemen to snail broth, kebabs, and sweets. The experience lasts about three hours and feels chaotic but fun if you like street food and don't mind standing while you eat.

The best time to go is spring (March-May) or autumn (September-November) when evenings are mild. Summer nights stay hot and winter can be chilly after sunset. Expect to pay around $35-65 per person including food; private tours sit at the higher end. Drinks and any extras are usually on you.

Pick the grilled meats and fresh bread; they're hard to mess up. Skip the tourist-trap stalls selling overpriced couscous or anything that looks like it's been sitting out too long.
