What to expect

Begin at Makishi Public Market, Naha's vivid two-story food hall, where your guide navigates the surreal display of purple taro, Okinawan sea grapes (umi-budo), mozuku seaweed, and whole turmeric. Then move to a private kitchen to prepare champuru stir-fry, rafute braised pork belly, and umibudo with ponzu. Sit down to eat what you've made, paired with Okinawan awamori rice spirit.
