Pull on waders, head into a working estuary, and harvest live oysters from the ocean floor — then shuck and slurp them straight from the shell with a local oysterman as your guide. PEI oysters are world-famous, and tasting them at their source is as good as gastronomy gets.
What to expect
You'll board a flat-bottomed skiff and motor into the calm, tannin-clear waters of a protected PEI estuary, where your oysterman explains the full lifecycle from spat to harvest. Waders go on, and you reach into the cool seabed to pull cages yourself before learning the art of shucking on the boat's gunwale. A dozen freshly shucked oysters per person, paired with mignonette and local bread, follows — briny, mineral perfection with the water still lapping beside you. The experience closes with a tour of the shoreline habitat and a frank conversation about sustainable aquaculture.
