A local aquaculture guide leads a small group onto the tidal flats of Wellfleet Harbor at low tide, pulling cages and explaining the three-year journey from spat to plate. Oysters are shucked on the spot and paired with local mignonette and cold New England craft beer or white wine. The briny, plump Wellfleets — considered among the finest oysters in the world — taste incomparably fresh at the source. The afternoon continues at Nauset Beach, a National Seashore barrier beach of extraordinary beauty, for a long, restorative Atlantic-side walk.
