What to expect

Board a private vessel directly from the farm's jetty on the shores of Great Oyster Bay, framed by the Hazards Mountains. Your host dives down to pull fresh Pacific oysters from the leases as you watch, then teaches you to shuck at the rail. A guided tasting follows — matched with Tasmanian Riesling, Pinot Gris, and Sparkling — as you drift over mirror-flat water.
