Expect chaotic, delicious, and occasionally overwhelming evenings. You'll stand or sit on plastic stools at busy stalls, eating with your hands or flimsy spoons while scooters weave past. A typical tasting covers 6–8 small bites: chole bhature, aloo tikki, dahi vada, paratha, maybe some chaat or jalebi. It's hot, noisy, and very local—far more intense than a quiet restaurant meal.
