
A Slow Food Presidium dedicated to preserving the traditional beekeeping practices of indigenous Náhuat and Totonaca peoples in Puebla's Sierra Norte mountains, where over 250 beekeepers produce honey from the endemic stingless bee Scaptotrigona mexicana using centuries-old terracotta hive methods. Visitors can learn about the sustainable 'productive forest' system, the medicinal and culinary properties of pisilnekmej honey, and support indigenous communities protecting their agricultural heritage from industrial land grabbing.
