Your chef-guide meets you at the Mercado de Mariscos, Panama City's legendary seafood market on the Cinta Costera waterfront, and walks you through selecting the day's catch. Back in a beautifully appointed private kitchen, you learn the architecture of Panamanian ceviche — leche de tigre, ají chombo, culantro — before moving to corvina al ajillo and patacones. The meal is eaten together at a communal table, with a rotating flight of local craft beers and a classic seco con pipa cocktail. Recipes are sent digitally after.
