Panamanian Table: Private Market, Cooking Class & Ceviche Ritual

Descend into the sensory riot of the Mercado de Mariscos with a chef-guide, hand-pick Pacific corvina and Caribbean lobster, then cook alongside a Panamanian chef in a private kitchen — culminating in a ceviche ritual with local beers and seco cocktails.

What to expect

Your chef-guide meets you at the Mercado de Mariscos, Panama City's legendary seafood market on the Cinta Costera waterfront, and walks you through selecting the day's catch. Back in a beautifully appointed private kitchen, you learn the architecture of Panamanian ceviche — leche de tigre, ají chombo, culantro — before moving to corvina al ajillo and patacones. The meal is eaten together at a communal table, with a rotating flight of local craft beers and a classic seco con pipa cocktail. Recipes are sent digitally after.

Good to know

The market is at its best and freshest before 10 am — request a morning session. The class runs ~3.5 hours; combine with a Casco Viejo stroll after for a full day. Allergies and dietary restrictions are accommodated with advance notice.
