From the tasting room overlooking native scrubland at 856 Playford Highway, a knowledgeable host walks you through the distillation process using KI's pristine aquifer water and foraged island botanicals. You nose and taste through the signature Wild Gin alongside seasonal small-batch expressions, learning how ingredients like Leptospermum and coastal saltbush translate into the glass. The bottle shop and cellar door allow you to take home limited-release spirits you simply cannot find elsewhere. Pair with a charcuterie board of local KI meats and cheeses for the full sensory experience.
