A private car whisks you from Veere across the Zeeland peninsula to the shellfish town of Yerseke on the Oosterschelde, where the cold, mineral-rich tidal waters produce some of Europe's finest bivalves. Your host — a shellfish farmer or specialist guide — walks you through the cultivation beds and explains the tidal rhythms that give Zeeland oysters their distinctive flavour. Then you sit down to a lavish tasting: a dozen freshly opened Zeeland flat oysters, steamed Oosterschelde mussels, local smoked eel, Zeeland smoked sausage, and a flight of regional wines and Jenever.
