What to expect
Your host meets you at the port and leads you through the aromatic stalls of the morning market — past smoked fish, sago, exotic vegetables and the vivid red betel nut displays that colour every Papuan streetscape. Back at a traditional kitchen, you learn to prepare dishes such as ikan bakar rica-rica (grilled spiced fish), sago pancakes with palm sugar, and papeda (sago porridge) served with turmeric fish soup.
