You'll meet a handler who explains the long history of falconry in the UAE, then watch one or two birds (usually a peregrine or saker falcon) fly freely, stoop on a lure, and return to the glove. Most packages let you hold the bird, feel its weight, and take photos. It's hands-on but not hands-off wild – the birds are trained and the setting is controlled. Evening sessions add nice light and fewer crowds; morning ones are cooler but can feel more touristy.
