The Shotover River is the main option: you'll get a dramatic drive into a steep canyon, a solid safety briefing, then 45–60 minutes on the water dodging rocks, hitting a few drops, and floating through narrow gorges. The water is cold (even in summer), the guides are experienced and humorous, and the scenery is genuinely impressive. It's a genuine thrill without needing previous experience, though you'll be paddling and following instructions the whole time.
The best time is December to March when the water is warmer and flows are more predictable. Shoulder months (October–November and April) are cheaper and less crowded but can be chilly. Expect to pay around NZ$180–260 per person including transport from Queenstown, gear, and the trip itself. Add-ons like photos or video usually cost extra.
Book the standard Shotover rafting trip and skip the packaged “canyon tour + raft” combos if you're short on time – they add a long bus ride with only marginal extra scenery.
