After a short briefing at the Sailing Centre on New Grimsby beach, you head out into the channel between Tresco and Bryher, weaving past sandbanks that shift with the tide and turn the water a startling Caribbean blue. Confident sailors can go it alone; less experienced guests can book an instructor for an hour's coaching before setting off. It's a physical, wind-in-your-hair way to see the island from the water.
