What to expect
You'll measure koji, soybeans, and salt by hand, learning ratios passed down through the host's family, then taste miso at different stages of fermentation from a month old to several years. Conversation drifts naturally into daily life in Karatsu and regional food customs. You leave with a starter jar to continue fermenting at home.
